An Almond Milk Recipe

  • 4 ounces of sweet almonds
  • 6 bitter almonds
  • Orange-flower water
  • 1 quart of water

Blanch the almonds, and grind them in a nut mill. Pound them in a mortar a little at a time, adding occasionally a drop of orange-flower water, to prevent oiling. When they are well pounded, return them to the mortar, and pour the cold water over them, mixing well. Place a cloth over the mortar, put a plate over that, and let them stand four hours. Strain and bottle for use.

An other Almond Milk Recipe

  • 1 qt water, ice cold
  • 1 cup soaked almonds
  • 2 tbsp raisins or 1 tbsp sweetener

Directions

Put all ingredients in a blender, and blend at high speed for 2
minutes. Serve over granola or cereal.

Almond Milk Soup Recipe

Blanch 1/2 pound of almonds and brown in the oven; while crisp and hot, mash to a powder with a rolling pin. Scald 1 quart of milk, add a tablespoonful of butter rolled in a tablespoonful of flour, and the almonds. Cook five minutes, add a teaspoonful of salt and a dash of cayenne, and serve hot with croutons.

Peanuts may be used in the same manner; or cook 1 cupful of shelled and blanched peanuts with 1/2 cupful of lentils for one hour, in 1 1/2 quarts of water, adding a slice of onion, a spray of parsley, and a stalk of celery. When tender rub through a puree sieve and add salt and pepper. Return to the fire and thicken with a tablespoonful of butter rolled in a tablespoonful of flour.
